
It’s cherry season and they’re in store now!
The last few days are also definitely ice-cream season too…
Why not combine the two by making a simple cherry compote to enjoy with ice cream as a light and tasty pud?
A simple way to create the compote is to stone your cherries, careful as they stain, then cook for 15 mins with a splash of orange juice or for a more grown-up version, then a splash of Ameretto or Brandy.
I think cherries are sweet enough, but if you want a sweeter version or a thicker version then you can add a little sugar. For around 500g of cherries, pitted weight, then two or three tablespoons of your liquid of choice should be enough. Cook on a low heat until the fruit starts to soften and give up its lovely juices. Add a little more liquid if it looks dry, but careful as the fruit will give out liquid too.
Should take around 15 minutes..
Serve warm, cold or pop into a sterilised jar and keep in the fridge for a super cold treat.
Should keep for 2/3 days easily and lovely with ice-cream, Greek yogurt or poured across a cake that needs a little moisture. Enjoy!!
