Made by volunteers, they turn a simple coffee order into “I wasn’t going to, but… oh go on then!” And one of the cakes most likely to turn heads is Kat Pilkington’s Chocolate Cake with Malteser Crumb, a Mary Berry concoction that’s seriously hard to resist. It appears like magic on a Wednesday morning, with Maltesers tumbling over the top in a chocolatey eruption. “It’s the cake I make every week,” says Kat, who lives in Ilmington and works at the Cotswold Distillery. “It’s a family fave. You can always rely on Mary.” Kat has two boys – Felix is seven and Rafe five – so she’s a busy person, but she still finds time to volunteer behind the scenes. “I can’t volunteer on a shop shift time-wise,” she says, “but I can bake a cake. I want to make a local contribution. I do a bit of cleaning in the shop as well. I’m part of Sue’s cleaning crew.” Thank you to all the cake bakers and all the folk who help out behind the scenes to make community life a little bit more “…oh go on then” for all of us
