
It’s a Lemon Tart that looks a lot like a cheesecake.
Ingredients
8 digestives
2oz melted butter
¼ pint double cream
1 tin condensed milk
2 lemons
Double cream or ice cream to serve
Method
Smash the biscuits, mix with the butter, form into a tin to make a base and chills for an hour or so. Then whip ¼ pint double cream and add the tin of condensed milk and the juice of 2 lemons. Once added to the top of the base it can then be chilled and decorated with lemon zest and kept for a couple of days meaning it could be made in advance which is always handy.
